Pasta With Zucchini And Beef Mince

Ingredients
- 1 zucchini
- 2 or 3 large tomatoes
- 1/2 red onion
- 3 or 4 cloves of garlic
- 250g beef mince
- 1 cup pasta (curly or spiral)
Directions
- Add water, 1/2 teaspoon salt, and 1 teaspoon oil to a small pot and bring to a boil.
- Add the pasta once the water comes to a rolling boil.
- Cook the pasta for 15 minutes or until done, then drain in a sieve or colander.
- Defrost the beef mince. If in a freezer bag, defrosting in water works well.
- Finely dice the garlic.
- Slice the tomatoes into small wedges.
- Slice the zucchini into thin slices.
- Cut the onion into squares.
- Microwave the onion for 2 minutes.
- Microwave the tomatoes for 5 minutes.
- Stir fry the onion and set aside.
- Microwave the zucchini for 3 minutes.
- Stir fry the beef, adding salt and pepper to taste.
- Set aside a large bowl to hold the cooked items.
- Stir fry the garlic, then add the tomatoes and a couple of pinches of salt to taste.
- Add everything back into the wok.
- Stir to heat everything through and serve in separate bowls.
