Steamed Pork Ribs With Black Bean Sauce

  1. Defrost the pork ribs.
  2. Soak the pork ribs in a bowl of water to draw out the blood.
  3. Squeeze out the blood — each rib has a vein with blood in it.
  4. Pour out the water.
  5. Finely chop the garlic, ginger, and fermented black beans.
  6. Prepare the soy sauce, oyster sauce, salt, and sugar.
  7. Dry roast the black beans in a wok until dry and fragrant.
  8. Add oil to the wok, then fry the chopped garlic and ginger until golden brown.
  9. Add the sauce mixture to the bowl of pork ribs.
  10. Put on a glove and massage the marinade into the pork ribs.
  11. Cover the bowl with cling wrap and let it marinate for 20 minutes.
  12. Pour hot water into the multicooker, turn it on, and wait until the water is boiling.
  13. Lay the taro (if using) and pork ribs into a serving dish.
  14. Transfer the dish to the multicooker and steam for 35 minutes on medium heat
  15. Remove excess water from sauce if pork ribs were meaty.
