Fried Rice
Our version of fried rice has dried scallops, garlic and the other typical fried rice ingredients. It has a light fragrant flavour.

Ingredients
- 20 dried scallops
- 1 cup of frozen peas, carrots and corn
- 1 large stick of spring onion
- 5 cloves or 0.5 bulb of garlic
- 4 eggs
- 7 large prawns (optional)
- 1.5 cups uncooked rice
Directions
- Soak the dried scallops for at least 30 mins.
- Defrost the prawns.
- Cook the 1.5 cups of rice.
- Marinate the prawns with Chinese cooking wine, salt and pepper for at least 30 mins.
- Chop 1 large stick of spring onion.
- Chop 0.5 bulb of garlic.
